I tried the Matcha Cheesecake served at “Blue Bottle Coffee” in Japan.

A Basque-Style Matcha Cheesecake
First, looking at its visual presentation, it has a flat, round shape reminiscent of a thick pancake. Sized just right for a single person to enjoy, it is priced at 825 yen (tax included)—a distinctly premium price point compared to most major cafe chains.

At first glance, it looks like a standard baked matcha cheesecake, but it is officially categorized as a Basque cheesecake, as introduced on their official Instagram.
According to their official Instagram, it originally launched around August 2024 as an exclusive offering in the Kyoto area. Since I ordered mine at a Tokyo location (Shinjuku), it appears to have expanded beyond Kyoto. However, because Blue Bottle Coffee’s food menu varies from shop to shop, this Matcha Cheesecake may not be available at every single cafe.
Crafted in Collaboration with a Michelin-Starred Chef
This cheesecake was developed in collaboration with Jérôme Quilbeuf, a renowned chef who previously helmed a three-star Michelin restaurant. Based on authentic Spanish Basque cheesecake, it is crafted with carefully selected ingredients, including specialty Basque cheeses and Hokkaido dairy (https://www.instagram.com/p/C-3oGf4gDYm/). While high-end chains like “DEAN & DELUCA” occasionally partner with acclaimed culinary masters, such chef-led development is a rare and welcome highlight for a coffee shop chain.
Tasting Impressions
The surface of the cake has a slightly airy, soft touch. The outer edges offer a pleasantly firm, dense, and springy bite, while the center transitions into a lush, molten texture. Savoring these subtle textural contrasts as the cake dissolves effortlessly across the tongue captures the true, irresistible essence of a Basque cheesecake.

In terms of flavor, the matcha has a clear, well-defined profile, perfectly counterbalanced by the rich presence of cream cheese. You can thoroughly enjoy the harmonious combination of dairy and Japanese green tea. While satisfyingly rich, it never feels heavy or cloying; the matcha strikes a delicate balance—neither overly astringent nor washed out, but just the right depth.
