I tried a delightful cheesecake featuring a rich, natural sweetness and a fun, popping texture. It’s the corn Basque cheesecake from “butter,” a cafe located in Nakano, Tokyo. Allow me to introduce the charm of this unique Basque cheesecake.
About butter
“butter” is a small cafe that opened in October 2021, located about a 5-minute walk from Nakano Station along Waseda-dori. According to the shop’s Instagram, their baristas have world championship experience and come from well-known coffee shops. Inside, a bench integrated with the wall runs along one side, equipped with 4 small tables, seating about 8 people in total.

The interior features an industrial design based on white tones. On review sites and blogs, it’s often described as a Korean-style or minimalist/inorganic cafe. True to that description, it has a sleek, minimalist vibe, but large glass windows at the entrance let in soft, warm light. While it isn’t a spacious cafe, it offers a cozy and pleasant environment to spend time in.
You wouldn’t imagine it from its compact size, but they offer an amazingly wide selection of drinks. Beyond authentic espresso-based options like cortados, macchiatos, lattes, and flat whites, they also offer charcoal lattes, various flavor lattes, tea lattes, and soft drinks. It’s an exciting lineup that makes you want to visit again and again. Since flat whites are hard to find around Nakano Station, I decided to order one this time.

What personally surprised me was finding croissants at an independent cafe of this size. Most cafe sweets lean toward easier-to-bake items like scones, pound cakes, or chiffon cakes, but here, they serve labor-intensive croissants—requiring dough folding and fermentation—exclusively for morning menu. While it’s possible not every step is done entirely from scratch on-site, I was amazed to see such high-effort croissants offered in a small cafe.
Corn Basque Cheesecake
While the croissant was tempting, this time I went for the seasonal “Corn Basque Cheesecake.”

It consists of a vanilla-infused Basque cheesecake with sweet corn embedded at the bottom, topped with charred corn on top. It has that stylish, Instagram-worthy look typical of trendy cafe desserts.

Basque cheesecake, which has become firmly established in recent years, has entered an era of customization, combining with various ingredients. Among these customized Basque cheesecakes, “Corn Basque Cheesecake” is something that has recently started appearing in cafes particularly sensitive to SNS trends. Its signature style—placing corn kernels at the bottom and topping it with charred corn chunks—matches this exact design.
There are subtle differences depending on the shop: while “butter” used vanilla in their cheesecake, “A WORKS,” a cheesecake specialty shop in Gakugei-daigaku, sandwiched ham inside. Other cafes have been seen topping theirs with melted cheese.

Tasting Impressions
Now, let me share how it tasted.

Taking a bite, along with the moist, melt-in-your-mouth texture of the Basque cheesecake, you get tiny specks of vanilla seeds and the fun, popping texture of corn kernels. It offers a playful mouthfeel that you won’t find in standard cheesecakes.

As for the flavor, the sweetness of the cheesecake itself is subdued compared to a standard Basque cheesecake. In addition to its creaminess and modest sweetness, the rich, gentle sweet flavor of corn gently spreads in your mouth. Furthermore, the elegant sweetness of vanilla lingers delicately, leaving a truly luxurious finish.
The restrained sweetness allows you to fully taste the cream cheese itself, and experiencing how surprisingly well corn and cream cheese complement each other is a huge highlight.
While you see it more often in cafes lately, it’s still hard to say if it’s completely mainstream yet. You might naturally wonder, “Do corn and cheesecake really go together?” But once you try it, you’ll be surprised by how wonderfully they pair. Above all, it offers a fun texture that no other ingredient can recreate. It’s very likely to pop up in more cafes in the future. If you see one, definitely give it a try!
